How it began
Born in Melbourne, 2024
A simple idea: that biryani, done properly, is something special — and even better surrounded by a full menu made with the same devotion.
Our biryani is our flagship: aged basmati, tender marinated meats, hand-ground spices, sealed in the pot and slow-cooked over dum until every grain carries the flavour. But we never wanted to be a one-dish kitchen. Alongside the biryani you'll find curries simmered for hours, rice specialities, crisp starters, fresh breads and traditional desserts — the kind of spread that turns a meal into an occasion.
On weekends, that spread becomes a full buffet: a table of biryani, curries, sides and sweets, all you can savour. Whether you're here for a quick lunch, a family dinner or a weekend feast, you're part of the Club. Pull up a chair.

The Dum Method
Four steps, zero shortcuts
Dum cooking is slow by design. Here's what happens before your pot reaches the table.
Marinate
Meat rested overnight in yoghurt, ginger-garlic and whole spices.
Layer
Par-cooked basmati layered with masala, saffron milk, mint and fried onions.
Seal
The pot is sealed with dough (dum) to trap every drop of aroma.
Slow-cook
Finished on low heat until the rice is fluffy and the meat falls apart.
